According to my stepson, we had way too much seafood last week. He’s not a fan. So, this week I went for more chicken and put in the pesto pasta he loves so much. I did put in one seafood dish because we’d been watching Rick Bayless and I couldn’t resist trying his chipotle cream prawns. They aren’t a very wintery dish, but eating them makes feel like it’s summer time somewhere!
Sunday-Roast chicken with potatoes and carrots
Monday-no cooking-off to the neighbors for dinner
Tuesday-chipotle cream prawn tacos
Wednesday-pesto pasta with Italian sausage (I didn’t want have only chicken this week, so I subbed the sausages for the regular chicken breasts in the recipe)
Thursday-chicken vendemmia with orzo and sauteed mushrooms
