I had the hardest time coming up with what to cook this week! I’m not sure why, but I just couldn’t make up my mind about anything. When I’m making up a menu, I usually take out the cookbooks or look online and get inspired, but this week, nothing was jumping out at me. So, my menu ended up with lots of scribbled out dishes, but I finally got it settled and then the store was out of a few things I wanted, so I had to change it again. Oh well, I’m still lucky to have the options we have and these things force creativity, right? We’re still eating lighter this week, so lots vegetables and seafood on the menu.
Monday- no official cooking, but I roasted beets, steamed sweet potatoes and cooked chana dal for dishes later in the week
Tuesday-Lime and ancho salmon with chipotle cream sauce, mashed potatoes and a beet, orange salad
Wednesday-Baja fish tacos, a recipe for our friends down in Todos Santos, you know who you are!
Thursday-Sweet potato cakes, chana dal and greens and roasted brussel sprouts
