I’m not a huge gadget girl. In fact, I went for a few years without even owning a hand mixer, but I have to say I love my panini maker/griddle. I bought it for the griddle option to make pancakes on, but we’ve ended up using it more for paninis. And I can say it’s worth the shelf space because it does more than one thing! You can still make this recipe in a pan and it will be delicious. It goes well with soup or salad and makes a fabulous, easy weeknight meal. I served them with red lentil and smoky paprika soup.
15 minutes-not counting the caramelized onions
8 slices rustic bread
4 tsps Dijon
about 4 oz Gruyere cheese, sliced thinly
1 recipe caramelized onions
about 2 oz baby arugula leaves
Put 1 tsp Dijon on each 2 slices of bread. Cover one side with cheese slices and top with 1/4 of caramelized onions. Put sandwiches together and brush each outside with olive oil. Grill in panini maker or in medium hot pan until cheese melts. Remove from heat, open sandwich and put a handful of arugula on each sandwich. Close back up and serve hot.
