Sauteed broccolini
This is a fabulous side for almost any meat dish. It’s quick and easy to prepare while your meat is cooking and it’s good for you.
About 15 minutes to prepare
1 bunch broccolini
1 medium or 2 small cloves garlic, chopped
olive oil
sea salt & freshly ground pepper
Wash broccolini and trim 1/2 inch or so off the stems. Heat a medium size saute pan over medium-high heat for 2 minutes. Add enough olive oil to coat the bottom of the pan lightly, about 2 tbsp and heat for another minute. Add garlic and saute till just beginning to brown, 2-3 minutes. Add broccolini to the pan and stir for a few minutes to coat with oil and garlic. Add salt and pepper to taste, about 1/2 tsp salt and 1/4 tsp pepper. Turn heat down to medium, cover and cook for another 4-5 minutes. Check for doneness by tasting a small floret or poking with a fork. It should be tender and the broccolini should be bright green. If too crunchy, put the lid back on and cook for another 3-5 minutes or so. When done, taste and adjust seasoning, remove from heat and serve or put the lid back on halfway and hold for up to 15 minutes.
